"As after the visit ten years ago, the question must be asked: Is Noma the best restaurant in the world, or at least one of the best? While ten years ago I could clearly answer in the negative, because we had the impression that we were eating the results of an undoubtedly impressive development laboratory kitchen, but which showed a great deal of "work in progress", this is now an outstanding menu in many respects. So my answer is: it depends for whom. If you like classic cuisine, enjoy conventional dining and don't like too much experimentation and deviation from the norm, you will certainly experience some very good dishes here, but you will be unfamiliar with some of them and will certainly be better off in other three-star restaurants in Copenhagen. However, those who are prepared to try their very own cuisine will be delighted. This menu will delight you with its combination of flavour quality, a high level of craftsmanship and the mature results of many years of development work. This is how flavour is created here without resorting to conventional flavour patterns. This applies both to the courses centred around king crab, which are more product-focused, and to the much more strongly composed and designed courses in the second half of the menu. Compared to restaurants I know that also follow this approach, the exceptional position of Noma is absolutely justified.
I found the atmosphere at lunchtime very pleasant. Even though it is relatively loud in the restaurant, there is always a certain amount of movement in the room due to the large number of staff, I felt very well looked after. It's perhaps not the most personal restaurant experience, where they also try to cater to the guest's own wishes, but I didn't get the impression that they were just reeling off a programme."
