Hotel dispenses with gourmet restaurant

AERZEN. As previously announced, Michelin-starred chef Stephan Krogmann has left the Schlosshotel Münchhausen and its one-star Hilmar restaurant. The reason for this is a new strategic direction for the culinary offering. According to the hotel, a modern and inviting fine-dining concept is to be introduced in the
concept in the elegant rooms of the HILMAR gourmet restaurant will appeal to guests who appreciate sophisticated, creative cuisine.

The restaurants at Schlosshotel Münchhausen have been a firm favourite with connoisseurs and gourmets since they opened in 2004, as evidenced by numerous awards in renowned restaurant guides. The gastronomic concept of the 5-star superior hotel continues to develop under the proven leadership of head chef Anna Köpke, who will have overall responsibility for all of the hotel's kitchens in future. She will be assisted by Sous Chef Thor Formell Monforte, who has already held his position at HILMAR in the past and has been back on board for several months after gaining experience in another restaurant in the region. He will continue to devote most of his creativity to the HILMAR restaurant and lead the kitchen team there.

In the atmospheric rustic ambience of the Schlosskeller, guests have always been spoilt with classics from Germany and all over the world, prepared with the finest regional products and seasonally adapted to the time of year. Fine cuisine with a regional influence that delights the palate at any time of year. In future, the elegant interior of the HILMAR will be more upmarket, in keeping with the spirit of the times. The main reason for the new concept is to offer hotel guests, especially those staying for several days, variety in their choice of restaurant. There are now two different culinary options available to a wider range of guests, each with its own atmosphere and flair. "The lower capacity utilisation of the HILMAR tied up space that the hotel lacks when it is busy," explains Hotel Director Jan-Robin Winnebald.

"In mid-August, we parted ways with Stephan Krogmann, who had been Head Chef at the HILMAR since December 2023, by mutual agreement. We would like to thank Mr Krogmann for his achievements over the past two years."

"Due to our unique location in Schlosspark Schwöbber, the earliest dendrological landscape garden in continental Europe, in the middle of the Weserbergland Nature Park, our guests have the desire to dine with us every day. We had a capacity problem when we were busy. We don't want to fill tables twice. Every guest should feel exceptional at Schlosshotel Münchhausen and enjoy themselves without time pressure," says Jan-Robin Winnebald. "With this new concept, we are optimally positioned and can offer our guests an even wider range of culinary delights."
