Cappadocia is deeply rooted in Turkish and Anatolian culinary traditions as well as the local terroir and offers a variety of options. From upscale and trendy restaurants to traditional eateries, Cappadocia's gastronomy offers impressive and unforgettable culinary experiences, such as slow-cooked meat in tandır, delicacies from fermentation techniques, famous preparations in sealed clay pots, fresh soups and rich mezze.

Cappadocia is located in Central Anatolia and is a historical region that stretches across several provinces. Cappadocia is known for its surreal valleys, hot air balloon shows at sunrise and its caves and houses. It is a UNESCO World Heritage Site and offers many other wonders besides its food culture. Gwendal Poullennec, International Director of the Michelin Guide, commented: "After Istanbul, Izmir and Muğla, our inspectors are delighted to include Cappadocia on their menu. They discovered a strong culture and age-old traditions that they would like to warmly recommend to our gourmets. Cappadocia's culinary tradition is closely linked to the region; chefs work with local produce and agriculture, which are essential in every step of the craft. Cappadocia is a land full of historical wonders. Travellers from all over the world come to visit the stone-carved caves and underground cities and to admire the hot air balloon spectacles. Now we want to give visitors another reason to choose this region: to experience the extraordinary culinary landscape of Cappadocia."

Mehmet Nuri Ersoy, Minister of Culture and Tourism of the Republic of Turkey, said: "Cappadocia is one of Turkey's most famous tourist destinations. The region's unique offerings already attract millions of visitors from all over the world. With its inclusion in the Michelin Guide, Cappadocia now takes on the role of representing the best of Central Anatolian cuisine. Shaped by thousands of years of tradition and influenced by civilisations - from the Hittites to the Roman Empire, from the Seljuks to the Ottomans - our Central Anatolian cuisine offers the best of the terroir with a surprisingly creative approach. We are delighted that our talented chefs and world-class restaurants in Cappadocia have gained the attention of the Michelin Guide and are confident that they will offer visitors a truly unique gastronomic experience."

The Michelin Guide Istanbul was first published in 2022 and has since showcased the gastronomic potential and diversity of Turkey's largest city and recommended remarkable restaurants. The MICHELIN Guide has expanded its offering on various levels. Two years ago, it expanded its coverage to include the coastal cities of Izmir and Muğla, and today it goes one step further to include the remote but highly acclaimed region of Cappadocia.
