New head chef at La Vallée Verte

Alexander Mayer will be responsible for the Michelin-starred restaurant at the Hotel Hohenhaus in future

HERLESHAUSEN: The renowned gourmet restaurant La Vallée Verte welcomes Alexander Mayer as a new addition.

Mayer began his career in 2012 with an apprenticeship as a chef at Jean-Claude Bourgueil's Michelin-starred restaurant Schiffchen in Düsseldorf. After other prestigious positions, he became head chef at the Wintergarten restaurant at the renowned Brenners Park-Hotel in Baden-Baden for the first time in 2019, before earning a Michelin star as head chef at the Atlantic in Hamburg in 2023. Most recently, he was responsible for the Eatrinalin in Rust.

Hotel director Peter Niemann, to whom La Vallée Verte owes not only its spirit but also its Michelin star, is delighted to be working with Alexander Mayer: "His style combines modern elegance with a subtle flavour and uncompromising quality standards - a signature that perfectly matches the philosophy of our hotel. It is therefore with great confidence that I am handing over our latest project at Schloss Hohenhaus to his care. This project is particularly close to my heart, not least because I had the privilege of being personally responsible for the construction management of the kitchen as well as the entire concept. It's all the nicer to know that it's now in the best hands."

After more than four years, the complex remodelling project at Schloss Hohenhaus is entering its final phase. In addition to 14 luxurious rooms, three exclusive wellness suites are also being created there. The completely redesigned La Vallée Verte will find its new home on the ground floor of the castle, where Alexander Meyer will bring fresh impulses, creative visions and a deep connection to seasonal produce cuisine. Guests can look forward to a revised menu line that combines proven sophistication with new, surprising elements. La Vallée Verte remains true to its philosophy: seasonal, regionally based cuisine at the highest level.
