Bastian Falkenroth takes over the kitchen at Mural
MUNICH. From 1 August, the experienced and multi-award-winning Bastian Falkenroth (born 1982), who has been the head chef and host at Bar Mural since the beginning of the year, will also take over the culinary management of Mural Restaurant.
He will now manage both restaurants for the Mural team around Mural founder Moritz Meyn with his own signature - uncompromising in product quality, creative in realisation and in keeping with the Mural credo "Eat Local". Falkenroth first cooked at Bar Mural for a longer guest appearance in 2023 - an experience that motivated him to move to Munich at the beginning of the year. At Bar Mural, he has since developed a sophisticated menu for what is probably the smallest fine dining kitchen in the city (2 square metres) - perfectly matched to one of the largest wine selections in the city and designed for a relaxed end to the day as well as for special evenings. From August, Falkenroth will take over the kitchen at the Mural Restaurant in Munich's historic city centre in addition to the Mural Bar.
Back to the roots: two establishments, one signature
"Bastian will be responsible for the menus in both locations and will also be at the cooker in both kitchens. With his craftsmanship, his experience, his coolness and his passion for flavour, he simply fits in with us - we have clearly felt that over the past few months," says Moritz Meyn, founder of the Mural Group, commenting on the appointment. "He has developed his first menu for the Mural Restaurant, which faithfully follows our credo 'Eat Local' and at the same time reinterprets it. It
is an accessible menu that leaves nothing to be desired in terms of fine dining," continues Meyn.
Falkenroth's menu (€119), which is available in fish, meat and vegetarian versions, includes courses such as "Char from Lake Schliersee - vineyard peach - ponzu - nasturtium" and "Herb side dishes - own flavours - spelt - charcoal".
The popular Mural Lunch remains as well as the current opening hours: Wednesday to Saturday from 12pm to 3pm and 6pm to 11pm (kitchen open until 10pm). "For me, it's always about balance, about dialogue, between ingredients, between flavours, between the dishes and our guests"
"I cook with the ingredients that appeal to me, that touch me, with what grows here, what is close by. Regional products, carefully selected and treated with respect. This has also been Mural's DNA for more than a decade, which is why I'm really looking forward to the responsibility entrusted to me. Bastian Falkenroth: From the Rhine via the North Sea to the Isar
Bastian Falkenroth has more than 20 years of formative experience in top German gastronomy. After training at Restaurant Berens am Kai in Düsseldorf (then 1 star Michelin), he worked as chef de partie at Le Moissonnier in Cologne (2 star Michelin), La Vie in Osnabrück (3 star Michelin) and La Table in Dortmund. This was followed by positions as head chef at the K&K Kochbar in Hamburg and later at SEAFOOD N°1 in Düsseldorf. From 2009 to 2011, he was sous chef at Nils Henkel's gourmet restaurant Lerbach in Bergisch Gladbach (3 Michelin stars). In 2013, he set up his own business and opened the U.dasRestaurant in Düsseldorf, followed by his own restaurant NENIO, which became known for its modern, minimalist gourmet cuisine - and for which he received a star in the Michelin Guide in 2016, followed by the FAZ's "Rising Star of the Year" award (2017). In 2019, Falkenroth moved to the island of Sylt, where he set new culinary accents as owner and host of Restaurant Goldgelb (2019-2022) and Marinara Beachclub (from 2020), before moving from the sea to the Isar and Team Mural.

Falkenroth's predecessor Felix Adebahr (born 1994), who has been cooking up the Mural Restaurant with fresh style since winter 2024, will be leaving at the end of July. Until then, he will still be serving his summer menu in the restaurant and courtyard - for anyone who wants to savour his creations one last time.

Whether casual dining in the Mural Bar or fine dining in the Mural Restaurant - the Mural DNA remains unchanged: "Eat Local" stands for uncompromisingly good products from the region, precision craftsmanship and a creative signature. The concept is complemented by the wine list under the motto "Drink Natural", which offers far more than just natural wine: the focus is on authentically produced wines from winegrowers who cultivate their vines with respect for nature and terroir.
