New head chef at HERITAGE Hamburg

Patrick Weber focuses on a modern cuisine in which creativity, quality and regionality take centre stage

HAMBURG The HERITAGE Restaurant at Le Méridien Hamburg has a new head chef: Patrick Weber (44) is taking over the culinary management of the renowned restaurant with a view over the Outer Alster Lake with immediate effect. Born in Lower Saxony, he brings with him extensive experience from the top hotel industry and focuses on modern cuisine that emphasises creativity, quality and regionality.

Patrick Weber has been working in upmarket catering for over two decades. He completed his training at the Michelin-starred Hotel Fürstenhof in Celle, which is part of the Althoff Collection. After working in Switzerland, at the Hotel Atlantic Kempinski Hamburg and most recently in consulting for RIMC, where he was involved in the opening of the Hamburg Bunker, among other things, he is now returning to the cooker with a clear vision: "For me, cooking is not a job, it's a passion. I want to get people excited about good food, work with the best ingredients from the region and at the same time integrate innovations from all over the world."

Proven concept, new impulses

HERITAGE remains true to its tried-and-tested concept: high-quality meat, creative preparation and excellent wines. However, Weber is bringing his own ideas to the table - including the production of home-matured dry-aged meat, new accents in the menu design and an increased focus on promoting young talent in the kitchen. "Together with my team, I want to make HERITAGE one of the best restaurants in Hamburg - and create an environment in which young chefs can flourish and develop," explains Weber. In addition to further developing the menu, Patrick Weber is also focussing on sustainability and team culture. "It's not just about the perfect dish, but also about how it is created - together, with respect for the product and for the people who prepare it."

"His passion for cooking and his modern, open manner are a perfect match for our ambition to further develop HERITAGE both in terms of cuisine and atmosphere," says Till Westheuser, Director of Le Méridien Hamburg. Weber can rely on the proven collaboration with Maître Axel Herz, who as Restaurant Manager will continue to form the heart of HERITAGE and ensure the usual excellent service quality with his many years of experience.
