"In any case, this was another example of how relaxed and laid-back it is to enjoy our neighbours, especially at lunchtime. Maurice Huynen's cuisine impresses with dishes that deliver very clear flavours and strong aromas with relatively few ingredients. The fact that very local ingredients from the immediate surroundings are also used emphasises the ambition here to reflect the region on the plate alongside all the internationality. Peterhans van Harinxma and his service colleagues create a pleasant atmosphere by engaging in small talk. The way they seamlessly switch from one language to the next in a multilingual manner commands my respect, even if this may not be quite so unusual near the border.
