"In my experience, you can only eat as French as Benjamin Chmura creates his dishes in France. It's the classic sauces, sometimes subtle, sometimes profound, that perfectly complement and frame the main products rather than overpowering them. In this respect, the dishes are perfectly balanced. I was less convinced by the proportions in two places (red mullet, dessert), which I see as the point that is currently missing to be able to advance to the absolute top of German cuisine. In terms of classic cuisine, however, I would put Tantris within sight of the classic restaurants. Benjamin Chmura has his own profile and therefore has a unique stylistic selling point in the phalanx of Munich's top restaurants. This is of course further emphasised by the iconic restaurant. It is one of the few restaurants in Germany that has the character of a grand restaurant, offering exclusivity at more than just a few tables. The service and wine selection round off this positive overall impression. We were provided with all the necessary information about the dishes. With the exception of the first course, everything was brought to the table at the perfect temperature despite the sauces being poured on. The wine selection is rather classic, but that suits the style of the kitchen and restaurant." (Published in April 2025)
