For Dominik Lobentanzer, "it no longer makes sense to continue my favourite project in its current form"

BURGHAUSEN: Dominik Lobentanzer is closing his one-star restaurant|271. An exact date has not yet been set. The restaurant will close on 1 January 2026 at the latest, but if a new tenant is found for the restaurant earlier, an earlier date is also possible, according to a statement.

Dominik Lobentanzer has decided not to extend his lease for the restaurant. "Despite all my passion and dedication, I have now reached a point where it no longer makes sense for me to continue my favourite project in its current form," he writes in the press release. "Even though we are still one of the fairest Michelin-starred restaurants in Germany - without an investor or large hotel behind us - certain general conditions can no longer be ignored. Rising costs in almost all areas - from purchasing goods to electricity and staff - and, above all, a staffing situation that has been strained for years are sapping our energy. Politicians are also making it very difficult, if not impossible, for a restaurant in our category to operate satisfactorily. Anyone who imagines the situation in Michelin-starred cuisine before and after the award of a Michelin star to mean that the chefs can rest on their laurels for the time being and diners are beating down the restaurant doors in droves is very much mistaken. Rather, it is extremely hard work every day, a high hourly workload every week, high pressure to fulfil all requirements, maximum effort to do justice to everyone: For us, at any rate, any profit always went into the quality of the products and not into our own pockets. That's why restaurant|271 is not facing insolvency, the closure has other - the aforementioned - reasons."

The uncomplicated "The Summer Popup" concept is currently running at restaurant|271 throughout the summer until further notice. Due to major upcoming staff changes, the concept of restaurant|271 may also change significantly in the remaining months thereafter, as an alternative to the familiar 3-/4-/5-course offer. Information on this will follow. Dominik Lobentanzer explains that he is deliberately leaving open what will come after restaurant|271. But the standstill will not last long.

In his press release, he describes the development of restaurant|271 as follows: "On 30 October 2020, I, Dominik Lobentanzer, quietly opened restaurant|271 at Mautnerstraße 271 - just three days before the second lockdown began and we had to close for seven months. A lot has happened since then: We have cooked day after day, always giving our best regardless of ups and downs and consistently putting the highest quality on our plates and in our glasses. As a result, we have continued to develop steadily, and the first awards were not long in coming - two red toques in Gault&Millau, later three black toques in Gault&Millau, a place among the best 500 restaurants in Germany in "Der Feinschmecker" and many more.This was followed by the Michelin star on 26 March 2024, which we were able to defend and retain this year in 2025. All of this was only possible thanks to my great team and the daily commitment of everyone - even with many personal restrictions."
