"Overall, I really enjoyed Benjamin Gallein's menu. The menu reads more classic than the dishes are. In my opinion, I see many very well-crafted dishes. The balance of ingredients, aromas and flavours is always perfect, without aiming for harmony in the classic sense. It seems to me that each dish is very individually conceived and developed. Although the menu dramaturgy is coherent, the sequence does not give me a clear picture of Benjamin Gallein's style. There was everything from classic to purist, expansive to opulent flavours. Perhaps this is still a development process. In any case, I particularly liked the two meat courses, but I am critical of the sweetness that runs through the first courses of the menu, as it masks some of the subtleties. But the menu as a whole shows a delight in not cooking too conventionally. The service was also very pleasant overall; we were guided through the evening in an unagitated and friendly manner. I thought the wine pairing was pretty spot on with the dishes." (Published in March 2025)
