Conference programme
→ Trend or hype: what lasts, what fades?
In a world of the ephemeral - how do you recognise what is just a fashion and what is establishing itself as a sustainable trend? From catering and architecture to design and guest wishes, some ideas catch on, while others quickly disappear.
With: Marie Kempter (ZenChef), Sabine Rogg (Trendbüro), Lorraine Haist (journalist & influencer)
Moderation: Sylvie Berkowicz
→ Generations in the kitchen: leading between tradition and new expectations
For a long time, top cuisine was based on discipline and total commitment. Today, a new generation is demanding more balance. How do you lead teams where these two attitudes clash?
With: Louis Morin (Restaurant Bocuse), a specialised management coach, Valérie Le Guern Gilbert
Moderation: Sylvie Berkowicz
→ The chronology of creation: the invisible behind every detail
Nothing extraordinary is created in the blink of an eye. In the kitchen, service, plates or ambience - everything is the result of years of work, research and refinement. This talk sheds light on the human and creative paths behind gastronomic excellence.
With: Karin Nebot, Sven Elverfeld (Aqua, Wolfsburg), Sabine Eichbauer (Tantris)
Moderation: Sylvie Berkowicz
→ The age of the glass: When gastronomy becomes liquid
For a long time, the plate took centre stage - today, drinks are also shaping gastronomy. Sommeliers, mixologists and producers are reinventing pairings and creating emotional experiences.
With: Jérôme Goffinet (Osan), Shahzad Talukder (L'Atelier), Laure Jubert, Rodolphe Taittinger (French Bloom)
Moderation: Chiara Buzzi
Open to all: €45 (reduced student rate available)
