Reorganisation at the Heinz Winkler residence
ASCHAU Changes are afoot in the kitchen of the Michelin-starred Residenz Winkler restaurant: The previous dual leadership in the kitchen management will be continued by Daniel Pape alone in future. This reorganisation is by mutual agreement. "We would like to thank Stefan Barnhusen expressly and with great appreciation for his commitment and outstanding performance over the past few years," the hotel announces.
As part of a strategic reorganisation, Residenz Winkler is repositioning itself. The gourmet restaurant is adjusting its opening hours: From 15 June 2025, the `Restaurant Epicures' - the new name of the gourmet restaurant - will be open on Thursday, Friday and Saturday evenings as well as Sunday lunchtimes. This decision follows the endeavour to meet the high standards of the cuisine in the long term and at the same time to promote a balanced operating structure, according to the press release.
In addition to the existing offer, a brasserie will also open in the building from 15 June. "We have been able to recruit Mr Martin Rehmann as kitchen manager for this. He has also already cooked up a star in his career. The 'Brasserie Tafern' offers guests an additional culinary facet - with a modern, uncomplicated concept that is aimed at both hotel guests and external visitors," the press release states. The Residenz is thus expanding its gastronomic spectrum and taking current guest wishes and market requirements into account.
The hotel will also be given a new name. It has been given the additional designation "Boutique Hotel" - a term that reflects the aspirations, philosophy and very special atmosphere of the Residenz. "It's more than just a new name - it's a clear commitment to what makes our hotel special: individual class, stylish hospitality and a place that touches," explains the statement. Last year, it was already honoured by Busche Verlag with an award in the Boutique Hotel category. But it's not just the name of the hotel that has evolved - the restaurants now also have names that reflect their respective identities and are also deeply rooted in the history and soul of our hotel.
Epicures - the gourmet restaurant
The new name of the gourmet restaurant is a play on sound, culture and enjoyment: "Epicures" tells a story, an epic that takes the events of the past further into the future. The dishes prepared by the kitchen team under the direction of Daniel Pape are also colourful descriptions of culinary delights. It also contains the French word Épice (spice), without which fine cuisine would not be possible. The Greek philosopher Epicurus already pointed out that the highest good and true happiness for man are the pleasurable experiences he has, and so the English term epicure stands for "a person who enjoys high quality food and drink". In addition, the written 'E' is borrowed from the handwriting of Evi Winkler, who has accompanied the fortunes of the residence for over thirty years. The name ends with "res". This restaurant is the centrepiece of the Residenz - a place where enjoyment becomes a way of life - an essential part of the essence (lat.: res) of our Residenz. In "Epicures", culinary visions merge with the finest craftsmanship - for all those who seek the extraordinary and want to celebrate the moment.
Tafern - the brasserie with a history
With the name "Tafern", the brasserie takes us back to the roots of the establishment: at the beginning of the 15th century, this location was already home to a tavern. An innkeeper who was granted the Tafern right by the sovereign was granted special privileges. The old house sign on the church façade is still a reminder of these origins today. The "Tafern" combines tradition and hospitality with modern, light cuisine - a place to arrive, feel good and enjoy a relaxed atmosphere. Authentic. Cordial. Timeless.
