A regular guest reports on his last visit to the chapel in Antwerp

"Nick Bril is present in the restaurant all afternoon, making conversation and greeting every table at least briefly. He is probably travelling as an ambassador for his own decision to leave this great location. He tells me that he feels he has reached the pinnacle of development in this place. It feels like a limitation to him. In terms of age, he considers himself to be about halfway through his career as a chef - so it's not bad what he has already achieved in the first half - and sees leaving as the start of further development. His aim is to become more focussed - he only wants to work on a third of his previous envelopes and invest all his culinary energy in them. Perhaps the longing for a third star plays a role here, I wonder. He remains tight-lipped about what exactly the new concept will look like. He says it will be even better than before, "that's my promise to you". He has convinced me that, despite the pain of saying goodbye to the chapel, I will visit him in the new concept and check out the promise."
