Second star for Restaurant Lea Linster and Colette - De Vijvers

Stars for 151 restaurants in Belgium and Luxembourg

(1 May 2025) - The Michelin Guide has published its ratings for restaurants in Belgium and Luxembourg for Restaurant 2025. Two restaurants receive a second star for the first time. 13 establishments are newly awarded one star and three establishments are awarded a green star for their commitment to more environmentally friendly gastronomy. In total, this new selection includes 790 restaurants, 151 of which have been awarded stars."The selection for Belgium and Luxembourg 2025 shines a bright light on a constantly evolving culinary scene," says Gwendal Poullennec, International Director of the Michelin Guide. "We are witnessing the emergence of a new generation of talent, the culinary assertion of established establishments and the launch of new projects led by already well-known chefs. Together, they form a mosaic of culinary expressions that are both unique and resolutely unbound. Whether they are based on tradition or fuelled by innovation, the award-winning establishments surprise, delight and inspire. Our inspectors thoroughly enjoyed rediscovering these tables, whose creativity and commitment make this selection particularly noteworthy."

The Zilte and the Boury retain their three stars

As proof of their immense talent, Viki Geunes and Tim Boury, together with their teams, have once again retained their three stars for their restaurants Zilte in Antwerp and Boury in Roeselare. This award, reserved for the most exceptional establishments in the world, illustrates the refinement of two unique culinary signatures created by these talented craftsmen. Whether through the quality of the ingredients, the technical mastery or the generosity and depth with which each dish is conceived, these two tables alone justify a true culinary journey!

Two new establishments receive stars

The Guide's inspectors have honoured two new entries in their selection this year: Léa Linster in Frisange, Luxembourg, and Maison Colette in Tongerlo, Belgium.

At Léa Linster, Louis, who took over the kitchen from his mother Léa a few years ago, has taken quality to a new level. The classic finesse and elegance that have defined the reputation of this establishment for decades have subtly evolved under his leadership, giving way to minimalist, contemporary and delicately spiced exotic flavours. The chef's top-class sauces add an extra dimension to every dish. By achieving two stars, Louis Linster further elevates gastronomy in this particularly warm family business.

Known for his restaurant Colette - De Vijvers, where he reached gastronomic heights, Thijs Vervloet has successfully launched a new project and obtained two stars for his new Maison Colette, now located in Tongerlo. In a former doctor's house that he has transformed into a luxurious setting, this lover of fine produce creates traditional and generous preparations. In this intimate house, guests are invited on an exclusive journey enhanced by exquisite wine pairings and small thoughtful details that extend to the finest touches.

The MICHELIN Guide Belgium & Luxembourg 2025 now includes a total of 22 restaurants with two stars.

13 new restaurants receive their first star

Luxembourg is not lagging behind when it comes to new restaurants that have been awarded a star. At Fields by René Mathieu, René Mathieu continues his passionate, plant-based culinary journey. Although he has left La Distillerie behind him, he continues to impress with his way of elevating vegetables, herbs and fruit. At his eponymous restaurant in Lauterborn, Archibald De Prince follows in the footsteps of his mentor, offering high-class creative cuisine that emphasises vegetables while still retaining some excellent dishes with animal proteins. Also in Luxembourg City, Clovis Degrave and his team offer an explosive experience at the Grünewald Chef's Table, which can be savoured at the counter.

In Brussels, chef Kobe Desramault's remarkable creativity is on display at Eliane, where he creates intense dishes that utilise the best ingredients he works with, such as a creamy risotto enriched with yellow wine and combined with oysters.

In Flanders, many of the new stars went to restaurants run by renowned chefs. At La Botte in Genk, Giuseppe Giacomazza continues to refine the food in this family-run restaurant. His ode to the Sicilian terroir is both authentic and original. Wouter Van Tichelen has moved to the luxurious De Tuilerieën Hotel in Bruges, where he showcases his talent at Mémoire. In Ostend, Dimitri Proost honours the reputation of HAUT with meticulous creations that highlight the best seafood the North Sea has to offer, enriched by subtle Japanese influences. At Modest in Opglabbeek, guests experience a delicate blend of French tradition and modern Asian influences, created by chef Sander Spreeuwers. Davy Devlieghere continues to impress at Julien in Lotenhulle with his homage to French gastronomy.

In Wallonia, the talent of young chefs is emphasised in this new selection. François-Xavier Simon at Bistrot Blaise in Marche-en-Famenne has established himself as a generous craftsman who blends the pleasure of French cuisine with excellent modern techniques. Curtis Maquet at the Beau Rivage by Curtis in Dave continues this Namur institution with finesse. His expressive, fine, product-oriented cuisine is both recognisable and elegant. In Comblain-au-Pont, Maxime Zimmer of Un Max de Goût shines with his focus on local artisans and producers, highlighting products with meticulous creativity. Finally, Quentin Gallopyn from La Vicomté in Roucourt impresses with precise and delicate dishes that impressed the selection team.

In total, the MICHELIN Guide Belgium & Luxembourg 2025 includes 127 one-star restaurants.

Three new restaurants receive the green star. At Fields by René Mathieu in Findel, the chef of the same name remains faithful to his plant-based cuisine in Luxembourg and the surrounding areas. He swears by local fruits and vegetables, often gathered, and is guided by the rhythms of nature. At Sophie & Nicolas in Comblain-la-Tour, Sophie Gigot and Nicolas Septon are true ambassadors of their environment. The products of local artisans are used from A to Z and are at the centre of their celebration of the Liège region.

At 't Gasthuis by InstroomArt in Mechelen, Seppe Nobels combines vegetable preparations with social engagement and culinary exchange. He emphasises local partnerships and shows how important the human aspect of a restaurant can be.

Special awards

Eating in a restaurant recognised by the Guide Mnichelin is often an experience that goes beyond the plate. Through their special awards, the inspectors celebrate professionals who put their talents at the service of unforgettable culinary moments.

Quentin Gallopyn from Vicomté in Roucourt receives the MICHELIN Young Chef Award.

The MICHELIN Sommelier Award goes to Laurent Dierickx from the recommended restaurant Les Frères Louise in Ellezelles. A history enthusiast, this professional delights customers with his knowledge and his ability to offer bottles or combinations that are out of the ordinary.

The team at the Bozar restaurant receives the MICHELIN Service Award. Well-dressed, smiling and attentive to every detail, this team offers a first-class and attentive service.

15 new restaurants receive a Bib Gourmand

The Bib Gourmand is the faithful companion for gourmets looking for the best value for money. With no fewer than 15 new addresses, 2025 is a fantastic year for this special award, which is given to a total of 126 restaurants. This year's new additions are as diverse as they are generous, from Thai cuisine at Lune Siamoise in Ixelles, to the traditional flavours at Table et Vin in Mont-sur-Marchienne, to the pintxos at Taberna Bask in Ledeberg. Brussels in particular has three new Bib Gourmand restaurants, Wallonia seven and Flanders five.
