Michelin Guide 2025: Third star for Mingles
40 restaurants in Seoul and Busan receive stars
The Michelin Guide has published the restaurant ratings for Seoul and Busan for the year 2025. The statement takes into account 232 restaurants, including 184 in Seoul and 48 in Busan.
This year's edition upgrades one restaurant each to three stars and two stars. Four upgraded and three newly added restaurants receive one star. 14 are newly rated with a Bib Gourmand. In total, the Seoul edition includes 37 restaurants with one star, one restaurant with three stars, nine restaurants with two stars and 27 restaurants with one star. In Busan, all three one-star restaurants have demonstrated the consistency and culinary skill required to defend their award this year.
"We are delighted to celebrate the ninth edition of the MICHELIN Guide Seoul and the second edition of the guide for Busan. Our inspectors have worked tirelessly to provide valuable information on outstanding restaurants. We are particularly proud to award Mingles, under the leadership of Chef Min-Koo KANG, the highest rating after its ninth mention in the Guide Seoul since the first edition in 2017. This recognition emphasises the team's continued commitment to providing exceptional culinary experiences. This year's edition presents a wide variety with new cuisine styles and unique offerings, reflecting the constant evolution of the Korean restaurant scene. As Seoul has established itself as a culinary destination, we are confident that Busan will also see an increase in outstanding restaurants and chefs over time," says Gwendal Poullennec, International Director of the MICHELIN Guide.
The new two- and three-star restaurants
Chef Kang Min-goo's attention to detail and warm minimalism are evident at Mingles, whose interior design emphasises Korean aesthetics. The ambience is emphasised by exquisite crockery and decorations by Korean artisans. The chef and his talented team combine tradition with modernity, creating dishes such as abalone cabbage seon and fish mandu that emphasise his creativity and respect for tradition. The restaurant receives its third star.
Chef Joseph Lidgerwood's adventurous approach at Evett transforms ordinary ingredients into imaginative dishes such as sikhye sorbet with hand-picked ants and tallow tart, reflecting Korea's seasonal favourites. Paired with an impressive wine selection, these dishes become even more irresistible. The restaurant will be upgraded to two stars.
The new one-star restaurants
Gigas, an authentic Mediterranean restaurant in Korea, is characterised by its commitment to sustainability and the use of organic ingredients from chef Jung Hawan's family farm. Despite the challenge of sourcing certain ingredients, the chef succeeds in presenting authentic Mediterranean cuisine that reflects the culinary traditions of the region. The restaurant's future growth in Seoul's culinary scene is as intriguing as the delicious culinary experience it offers.
Y'east, under the direction of chef Cho Young-dong, is a culinary oasis with unlimited possibilities. Chef Cho delights his guests with familiar dishes that he reinterprets with his unique aesthetic, using rare ingredients to create novel flavours. Specialities such as the kaya toast-inspired amuse-bouche and Galbi Stone, braised ribs in various forms, illustrate his ability to combine the new with the familiar while preserving the essence of the original flavours. Each dish at Y'east offers a culinary experience with fresh flavours and unconventional creativity, making it a highlight of the culinary scene.
Chef Sung's passion for vegetables since childhood has given him a deeper understanding of vegetarian food. This, combined with his unique perspective, has resulted in his one-of-a-kind delicacies. At Légume , sensual, contemporary cuisine meets the chef's experienced skills and becomes a vegan menu with a distinctive identity and imaginative flavours. The kitchen's vegan dishes appeal not only to vegetarians, but also to people with a wide range of palates.
The dining room by interior designer André Fu, inspired by Shanghai in the 1920s, features jade-coloured walls, marble floors, luxurious furniture and fine tableware. Yu Yuan 's menu features mainly Cantonese dishes, including Peking duck, crispy pork belly and Cantonese-style steamed sea bream. Their dim sum brunch at the weekend is very popular.
Chef Jin Woo-bum's passion for Mexican food is reflected at Escondido , where he offers authentic Mexican cuisine with unique touches. Having honed his skills in Mexico, he creates nuanced flavours with classics such as tortilla and mole. The combination with tequila, mezcal or a cocktail rounds off the gourmet experience.
Tutoiement , under the direction of chef Kim Do-hyeon, offers a friendly and casual dining experience with refined French cuisine. The calm, inviting ambience and attentive service complete the experience, while the chef's skilful presentation highlights the harmony between flavours and sauces. Chef Kim's culinary journey focuses on creating memorable culinary experiences rather than imitating others.
Savour chef Park Kyung-jae's sushi at Sosuheon in Seoul. The elegant, traditional Korean ambience and the chef's precise sushi creations make for a special experience. Guests can enjoy first-class seafood at any time of year. The chef's statement: "It is an honour to serve the best guests with the best ingredients, in the best room and with the best staff", reflects his career as a specialist in Japanese cuisine. A meal at Sosuheon is an unforgettable experience that delights the emotions and senses in equal measure.
The Michelin-starred restaurants Fiotto, Mori and Palette in Busan confirm their rating.
