"Overall, I quite liked the dishes. I deliberately write dishes because it was only in the second half that the menu had a recognisable signature and dramaturgy. In view of the constellation of two young chefs at the helm, this is not surprising and should not be seen as a negative criticism. Not only the stringency, but in my opinion also the quality of the composition increases when the combinations become more classic and therefore more tried and tested. Then classic craftsmanship becomes apparent, but without creating old-fashioned flavours." (Published in March 2025)
