Fabian Obergfell succeeds Niclas Nussbaumer

SCHLUCHSEE. The Boutique Hotel Mühle in Schluchsee has announced a change of chef for its two-star restaurant, with Niclas Nussbaumer and Lea Rupp taking their leave on 6 May 2025 to pursue new challenges. After a short break, Fabian Obergfell will take over as head chef on 22 May - a change that will further develop the restaurant's culinary profile and further emphasise its identity.

Obergfell, himself a native of the Black Forest, brings with him extensive experience in top-class gastronomy. He was most recently Sous Chef at the Ophelia restaurant in Constance (2 Michelin stars) for many years. His career has taken him through some of the most renowned establishments in Germany, including the Brenners Parkhotel in Baden-Baden, where he completed his master's degree and contributed to the award of two Michelin stars. Fabian Obergfell's time at the Waldhotel Sonnora in the Eifel was particularly formative. The restaurant is considered one of the most prestigious establishments in the country. There he internalised the subtleties of classic French cuisine and learned that perfection lies in the detail.

His philosophy is clear: excellent craftsmanship, first-class products and a cuisine that is both down-to-earth and precisely thought out. He favours a harmonious combination of regional influences and international ingredients without sacrificing authenticity. What is important to him is a well thought-out composition that impresses with its clarity and depth of flavour.

He is supported by Sous Chef Tobias Ortlieb, who has been part of the team since 2022. The two have been working together for many years and are close friends - a dynamic that is also reflected in the precise and well-rehearsed kitchen management. There has also been a personnel change in service: Sina Pfefferle, deputy restaurant manager since 2022, is taking over the management. As a native of the Black Forest, she remains true to the signature style of the establishment and ensures continuity in guest service.

For Obergfell, the Mühle is more than just a new stop - it is a conscious return to his roots. With his clear culinary line and a strong team at his side, he is leading the Mühle into a new era in which quality, authenticity and depth of flavour take centre stage. The Mühle thus remains one of the leading gourmet addresses in the Black Forest and combines down-to-earthness with the highest level of precision craftsmanship.
