Daniel Schimkowitsch began his career in Munich, where he was awarded his first Michelin star at the "Tramin" restaurant in 2011. In 2014, he moved to Deidesheim, where he took over the "L.A. Jordan". "I always wanted to create a place here that you wouldn't expect to find in the Palatinate," explains Schimkowitsch. He has consistently pursued this vision and turned the restaurant into a culinary highlight in the region. However, the early days were not easy. "When I started in 2014, we were already changing little things, loosening things up a bit," recalls Schimkowitsch. Renaming the restaurant and renovating it were important steps in creating a new atmosphere. The new name "L.A. Jordan" was intended to create a link to the nearby Bassermann-Jordan winery and at the same time be internationally recognisable.
A central aspect of Schimkowitsch's philosophy is the quality of the products. His trips to Japan and working with suppliers such as Grischa Euler have helped him to find the best ingredients for his dishes. "I always wanted to offer guests something they weren't expecting," he emphasises. This search for excellence has made "L.A. Jordan" one of the best restaurants in Germany. Schimkowitsch is known for his Asian-inspired flavours and his "product fetishism". "I learnt how to cook a Thai curry in Munich and these flavours have always fascinated me," he explains. These influences are clearly noticeable in his dishes and give them a unique flavour.
Despite all his success, Schimkowitsch remains modest and reflective. "Maybe I was just far too loud," he admits. Continuous development and the search for new ideas are essential for him. "We very rarely repeat dishes," he says. It is this dynamism and creativity that make "L.A. Jordan" so special.
