  • Austria lives regionality and sustainability: 33 green MICHELIN stars for resource-conserving gastronomy

SALZBURG (21 January 2025) - The MICHELIN Guide Ceremony and announcement of the new Austria Selection 2025 took place at Hangar-7, where the renowned restaurant selection of the culinary guide was presented for the whole of Austria for the first time since 2009. With a total of 82 starred restaurants, 43 Bib Gourmands for the best value for money and 33 Green Stars for sustainable initiatives, there is a remarkable number of awards across all regions.

The MICHELIN Austria guide presents a new 3-star restaurant in the nationwide edition. The Viennese restaurant Steirereck im Stadtpark- previously honoured with two stars in the Vienna restaurant selection - has now made it into the top league. This extraordinary achievement is thanks to the individuality and authenticity that owner Heinz Reitbauer and his team led by head chef Michael Bauböck bring to the plates at this location. "Definitely not off-the-peg cuisine. The dishes are not over-cooked or overloaded. The cooking here is light, fresh and with impressive elegance and flavour complexity," say the MICHELIN inspectors, expressing their full enthusiasm. The Steirereck impressively demonstrates to guests that luxury products are not always necessary for top-class cuisine: The inspectors were also impressed by a "veal bruschel with chive dumplings and marjoram", as well as the overall remarkable selection on the menu, which also includes some classics and many regional products. In addition, great praise goes to sommelier René Antrag, who shines with real wine expertise. Steirereck im Stadtparkshares the top gastronomic position in Vienna and Austria with the chic Amadorrestaurant, which is housed in the Hajszan Neumann winery and has been awarded three MICHELIN stars for Juan Amador 's refined and creative cuisine for many years.

13 new two-star restaurants

The MICHELIN Guide has awarded two stars to 13 new restaurants in Austria. Five establishments were already listed with two stars. These include the Stüva restaurant in Ischgl in Tyrol (TIR). Here, patron and head chef Benjamin Parth impresses with absolutely outstanding product quality and creativity in his menu. The small Ois in the remote Mühltalhof in Neufelden (OOE) should also be mentioned, where Philip Rachinger provides top-class cuisine with many a surprise effect. Equally outstanding is the self-confident modern cuisine that Johannes Nuding now serves at the Schwarzer Adler in Hall in Tirol (TIR) after returning to his Austrian homeland from international gastronomy. The tastefully alpine Griggeler Stubain the "Burg Vital Resort" in Lech am Arlberg (VBG), where head chef Sebastian Jakob is responsible for a creative menu with skilfully integrated Japanese accents, is also top class. Also worth mentioning is the classic restaurant Obauer in Werfen (SBG). Classic, but by no means outdated, the brothers Karl and Rudolf Obauer uphold the values of this traditional family business. The Kräuterreich by Vitus Winkler in Sankt Veit im Pongau (SBG) is a complete contrast in philosophy and style, but also clearly recognisable. Vitus Winkler 's natural, strictly regional and herb-rich cuisine is extremely creative and out of the ordinary. In addition to two MICHELIN stars, the restaurant has also been awarded a Green Star for its sustainable philosophy. New in Vienna and directly awarded two stars is the Doubek restaurant, where patron Stefan Doubek creates a very special experience with his special fire concept. Here, guests are taken on an exciting and well thought-out journey that will definitely be remembered. The following Viennese restaurants were also able to confirm their two stars: Silvio Nickol Gourmet Restaurant, Mraz & Sohn and Konstantin Filippou.

53 new one-star restaurants

There are 53 new restaurants among the 62 restaurants in Austria that have been awarded a MICHELIN star. These include, for example, the restaurant Die Forelle in Weißensee (KTN), located in the nature park, where chef Hannes Müller draws inspiration from the surrounding nature for his creative regional "Berg.See.Küche" cuisine, which has earned him a Green Star in addition to the MICHELIN star. The RAU nature-based cuisinein Großraming (OOE), where owner and head chef Klemens Gold impresses with his very own "10 seasons" concept, also deserves a mention. Here, too, the focus is on nature and the season, and the consistent implementation of this philosophy has earned the restaurant a Green Star. At Sigwart's Tiroler Weinstuben restaurant in Brixlegg (TIR) - a sixth-generation family business - patron Gertraud Sigwart's classic cuisine, which is peppered with individual influences, is impressive. Another fine example of Michelin-starred cuisine is the casual, modern eatery in Hadersdorf am Kamp (NOE), where Roland Huber makes the choice difficult for guests with his very own Asian-influenced creations. In Vienna, in addition to the five 1-star restaurants already recommended - TIAN, Edvard, APRON, [aend] and Pramerl & the Wolf - three more restaurants have been awarded a star: Esszimmer - Everybody's Darling with Alexander Kumptner's young modern concept, the stylish Herzig restaurant with Sören Herzig 's precise modern cuisine and Z'SOM, where patron Diego Briones adds a special touch to the plates with the flavours of his South American homeland, while the chef exudes Tyrolean charm in the service.

33 restaurants receive a green star

Since 2020, the MICHELIN Green Star has been awarded to sustainable concepts in the catering industry. These are restaurants that stand out for their respectful treatment of nature and resources, as well as for sensitising staff and informing guests. In the Austrian selection, 33 restaurants were awarded a Green Star for these pioneering initiatives. In addition to the restaurants in the Vienna selection that have already been honoured with a Green Star, the MAST Weinbistro and the TIAN, the 31 new Green Stars include, for example, the Dreikanthof Am Mahrbach, which is located in the middle of naturein Königsdorf (BGL), which has also been honoured with a MICHELIN star, the extremely cosy Floh restaurant in Langenlebarn (NOE) and the traditional family business Thaller in Sankt Veit am Vogau (STM), which has been awarded a Green Star for both its inn and restaurant, the latter also with a MICHELIN star. Also worth mentioning are the Rauchkuchl in the secluded village of Stuhlfelden (SBG) with its ancient wood-burning cooker and the Guat'z Essen restaurant in Stumm (TIR), which was awarded a MICHELIN star as well as a Green Star. No less committed to sustainability is the Steirereck am POGUSCH restaurant in Turnau (STM), which is charmingly situated in the countryside.

43 restaurants receive Bib Gourmand

In the Austrian selection, the MICHELIN Guide has honoured 43 restaurants with the Bib Gourmand, an award that indicates good value for money. Four restaurants from the previous Vienna selection - MAST Weinbistro, Meierei im Stadtpark, Mochi and Woracziczky - retained their Bib Gourmand, as did the Carnozet restaurant in Hirschegg in Kleinwalsertal. The 38 new Bib Gourmand restaurants include the pleasantly unpretentious restaurant Zum fröhlichen Arbeiter in Apetlon (BGL), the Malerwinkl in Fehring (STM), which is housed in a small art hotel, and the restaurant Mocking das Wirtshaus, which is located directly below the Streif in the famous ski resort of Kitzbühel (TIR). The Göttfried, located in the centre of the old town of Linz (OOE), the charmingly individual Freigeist in Lustenau (VBG) and the picture-book inn Hueber der Wirt in Bründl in Sankt Georgen an der Leys (NOE) also impress with their tasty and fairly priced cuisine.

Special awards

The MICHELIN Guide presented three awards for special achievements: Service, Young Chef and Sommelier were honoured. The MICHELIN Service Award went to Barbara Eselböck from the Taubenkobel restaurant in Schützen am Gebirge (BGL). As an exemplary hostess, she shows true passion, charm and passion in the long-standing family business - the perfect accompaniment to her husband Alain Weissgerber's two-star cuisine.

The MICHELIN Young Chef Award went to Julian Stieger, head chef at the Rote Wand Chef's Table restaurant in Lech am Arlberg (VBG). He has achieved considerable success with his "Chef's Table" concept, having been honoured with two MICHELIN stars for his very own style of cuisine. In a surprise menu, he impresses with modern dishes that show a lot of effort, but at the same time do without a lot of fuss.

The deserving winner of the MICHELIN Sommelier Award is Alexander Koblinger, who proves to be a walking wine encyclopaedia at Döllerer's gourmet restaurant in Golling an der Salzach (SBG). As one of the few master sommeliers in Austria, he now works as head sommelier in Salzburgerland after working in the USA and Great Britain. His wine pairings are sensitively presented to the point, and he never fails to impress guests with his expertise. A perfect "match", both for Andreas Döllerer's modern Alpine star cuisine and for his regional, seasonal tavern cuisine.

Gwendal Poullennec, International Director of the Michelin Guide, comments on the return of the Michelin Guide to Austria: "Austria has developed an exciting restaurant landscape characterised by tradition and innovation. We are all the more pleased to present an extremely interesting and varied selection. Our inspectors - anonymously and independently - have used their renowned high quality standards, care and expertise to identify restaurants in various comfort and price categories throughout the country, whose standard and variety have impressed them. Across the country, the catering scene stands out for its regionality. People are proud of the high-quality local produce, which is sourced from farmers in the immediate vicinity or, in some cases, grown in-house. Freshwater fish play a major role, as do home-smoked meat products and a variety of cheeses, to name just a few examples. The focus is on seasonal produce and much of the food is organic. Numerous establishments show an enormous commitment to sustainability, which they consistently implement in well thought-out concepts. Austrian restaurateurs are following an exemplary and forward-looking path here. We are also seeing a trend towards preserving culinary traditions. A good example of this is the famous desserts and pastries, skilfully integrated with modern influences. International flavours, particularly from Asia and South America, are added in carefully measured doses. The cuisines of Austria's neighbouring countries are also incorporated by the restaurateurs. The restaurants' wine lists are also worth mentioning, which are often dominated by local wine-growing regions due to the high quality of Austrian wines. Our inspectors were also impressed by the very well-trained and extremely charming service teams, who embody true hospitality."

The return of the MICHELIN Guide and the ceremony were initiated and co-organised by Österreich Werbung (ÖW) and the regional tourism organisations. The Austrian presence of Guide MICHELIN was also made possible by the commitment of the industry representative organisation of the Austrian Federal Economic Chamber. In addition to numerous chefs who accepted their awards, the event also attracted many VIPs and national and international journalists to Salzburg to celebrate the excellence of Austrian gastronomy.

The MICHELIN Guide's selection of restaurants not only emphasises the diversity of cuisine, but also underlines the importance of gastronomy and the international orientation of Austria as a culinary and tourism location.

Cuisine as an ambassador for Austria as a tourist destination

"Today's award of the MICHELIN stars is a milestone for Austria's cuisine and a strong sign of the international appeal of our gastronomy. Cuisine is more than just enjoyment - it combines culture, landscape and people. This success also confirms important goals of our Austrian tourism strategy, namely to further develop quality and regionality as key strengths of Austria as a tourist destination," explains Susanne Kraus-Winkler, State Secretary for Tourism.

"The cooperation with the MICHELIN Guide is not only an honour for Austrian cuisine, but also a sign of the passion and commitment that goes into every kitchen in our country. With their creativity and skill, our award-winning chefs create culinary experiences that touch hearts and inspire people. I congratulate them on this great success - they are the soul of our culinary excellence," adds Astrid Steharnig-Staudinger, CEO of Austrian National Tourist Office.

Rating of all federal states strengthens internationalisation

"I am proud that the MICHELIN Guide is returning to Austria - a success that has also brought with it challenging phases. Following the presentation of the awards, the many positive emotions on all sides show that this journey was worth every grey hair. At last, all the federal provinces are being assessed and all the ratings are helping to ensure that Austrian cuisine can further increase its international appeal," emphasises Michael Feiertag, Managing Director of Steirische Tourismus und Standortmarketing GmbH and spokesperson for the provincial tourism organisations in 2024.
