"Jeroen Brouwer's cuisine is characterised by great finesse, considerable effort and, in many courses, creative originality, as demonstrated by the mackerel, scallops and dessert. The ambition to achieve higher ratings is clearly recognisable, although two Michelin stars could indeed be justified here. The chefs and Jeroen Brouwer himself are mainly responsible for the service at the Chef's Table. However, Nick Nijkamp is always present at our table as sommelier and guides us through the extensive wine list with expert knowledge. Even though the atmosphere in the actual dining room certainly has its own special charm, I would always choose to sit in the kitchen again. It is far too exciting to watch the concentrated hustle and bustle and to communicate with the chef. It's obvious that his development still has a lot to look forward to." (Published in October 2024)
