"echt. gut. essen." becomes "silva"
The Naturhotel Forsthofgut is bringing the year 2024 to a close with a new culinary opening. The fine dining restaurant "echt.gut.essen" will open under the unchanged management of head chef Michael Helfrich with a new kitchen concept and will become the restaurant "silva - Taste the forest" from 13 December. Derived from the Latin word for "forest", the new approach pays homage to nature and reflects the Forsthofgut's historical and far-reaching connection to the forest.
A tribute to the forest
The fine dining restaurant "echt. gut. essen." at the Naturhotel Forsthofgut has just been awarded three Gault&Millau toques and there is already a change: in keeping with the credo "Taste the forest", the focus in the "silva" restaurant will be on the forest from 13 December. As a former forestry operation, this natural area was the basis of life for previous generations for a long time and was therefore of the utmost importance. The "silva" is creating a culinary monument to nature and aims to preserve the essence of the forest and show its appreciation.
The "silva" unites traditional cooking with modern gastronomy and invites you to savour unique creations with all your senses. The team brings the gifts of the forest to your plate and glass. Smoking and fermentation techniques are used to preserve and intensify the authentic flavour of the forest using the best ingredients. Leftover food is carefully preserved so that it can be reused at the right time. The philosophy of taking and giving back is thus lived out in the processing. The forest theme awaits guests not only in the dishes, but also in the flavour and overall ambience of the "silva". Typical colours such as soft green, dark brown and soft accents round off the interior concept. In the kitchen, a stone kitchen block shows the rugged side of the forest, while velvety fabrics and wood create a cosy atmosphere. Guests have a choice of two flavours every day: The classic Forest menu and the vegetarian-vegan Meadow menu. Alternatively, an individual gourmet menu can be put together with the recommendation of Mr Helfrich. The "silva" invites passionate gourmets, discerning connoisseurs and guests with a high standard of quality of life to enjoy the unconventional and innovative culinary experience of the forest.
The "silva" offers space for up to ten people and is open Tuesdays to Saturdays from 18:30 for hotel guests and external guests. Reservations are accepted until the evening before to enable a culinary journey of discovery through the forest.
