SYLT. The final of the new patisserie competition organised by KALK&KEGEL and Confis Express was won by 24-year-old Luise Grottenthaler from the 2-star restaurant Söl'ring Hof on Sylt.

It was creations such as "Boiron Peach with Original Beans White Chocolate, KOA Cocoa Fruit and Flakes with Fennel and Rose" with which Luise Grottenthaler impressed the jury of the best patissiers and confectioners in the German-speaking world. The 24-year-old pastry chef from the 2-Michelin-starred restaurant Söl'ring Hof on Sylt won the premiere of the new COMPOTE COMPLOT competition for young pastry chefs, which is organised by the culinary and wine magazine KALK&KEGEL in partnership with Confis Express.

Second place in the international competition with participants from 5 countries went to the South Tyrolean Benjamin Sellemond (Bäckerei, Konditorei & Café Sellemond, Feldthurns/Italy). German Celestina Bengui from the 2-star restaurant Ocean in Porches, who works in Portugal, was delighted with third place. "With COMPOTE COMPLOT, we are giving modern patisserie a big stage and putting the best talents in this industry in the spotlight," says Michael Pöcheim-Pech, publisher of KALK&KEGEL magazine. The COMPOTE COMPLOT winner Luise Grottenthaler will also receive a fantastic prize: together with Original Beans, she will be travelling to Peru, the country of origin of chocolate.

The jury for the final of COMPOTE COMPLOT was made up of the current greats of German-speaking patisserie: Julia A. Leitner (CODA, Berlin - no. 62 World's Best Restaurants), Kay Baumgardt (Gault&Millau Switzerland Patissier of the Year 2020 - Gourmet Restaurant Mamesa, Burgeis), Thomas Scheiblhofer (Gault&Millau Austria Patissier of the Year 2016 - TIAN, Vienna), Sabrina Schanz (Gault&Millau Germany Patissière of the Year 2015 - Original Beans), Ian Baker (Patissier of the Year Schlemmer Atlas - Vier Jahreszeiten Kempinski, Munich), Matthias Mittermeier (Executive Pastry Chef Pfersich Trendforum, Neu-Ulm) and jury spokesperson Jan Eggers (Gault&Millau Austria Patissier of the Year 2024 - Zur Goldenen Birn, Graz & Doux Heros) as well as Thomas Kracher (Head Sommelier SENNS.Restaurant, 2 Michelin stars in Salzburg) and the Chief Inspector of Gault&Millau Austria, Jürgen Schmücking.

In 2025, the patisserie competition will be continued by KALK&KEGEL in partnership with Confis Express. The application phase starts in March 2025 with all information at www.compote-complot.com
