"Perhaps it wasn't so clear to me during our last visit, but Thomas Schanz has managed to develop a signature that is increasingly recognisable as his very own. You see a plate and in many cases you can recognise it directly as his own. His goose liver dishes alone are already iconic. He effortlessly manages the balancing act between traditional French haute cuisine and sometimes almost audacious combinations, which prove to be incredibly coherent as a result of careful consideration. The fact that he doesn't give some dishes heavy sauces, but highly aromatic and complex broths, also emphasises how light a menu appears here. Although I would be the last person to say anything against the wonderful sauces. No, this was a completely convincing and strong menu. I am happy when there is at least one dish that is so memorable that I remember it forever. Here and today there were several." (Published in August 2024)
