"I have to say, I imagined Sven Wassmer's kitchen to be different. It is often associated with the concept of reduction. In my experience, however, this term only applies to the number of components on the basis of this one menu. The flavours, on the other hand, are powerful and sometimes expansive. They have a full flavour and are not limited to flavours that I, at least, associate with the Alpine world. Sven Wassmer certainly does not have a reduced flavour. The flavours are full-bodied, multi-layered and powerful. They are consistently flattering and highly recognisable, as you would expect in a three-star restaurant. This applies first and foremost to sauces until the main course. The dishes are particularly exciting when they show other facets with the main product than when enjoyed on their own. This applies first and foremost to the char - quite rightly the signature dish. The main course then turns the tables and shows a product in perfection. With the exception of the Knöpfli, a "traditional dish", the other dishes fall short of the absolute top level. But because the highlights are simply masterful and the craftsmanship is consistently perfect, the three stars are absolutely justified." (Published in August 2024)
