Chef's Table in Passau
PASSAU. Marcel von Winckelmann has set up his own business in Passau. The restaurant, which also includes a cookery school, bears his name. The centrepiece is a chef's table built in a horseshoe shape around the open kitchen. "Our restaurant should be approachable, our cuisine should be fun, our service is relaxed and with an informal mentality. Here you can quickly strike up a conversation about the food, good wine and God and the world," says Marcel von Winckelmann, describing his concept. His wife Lisa and sommelier Nico look after the well-being of the guests together with the team.
Those who prefer a more discreet setting can reserve a seperée with a maximum of 15 seats. The room is suitable for smaller parties, business meetings and family celebrations. In the summer months, the menu can also be served on a sheltered terrace.
The menu consists of three starters, a bread course, four or six courses and petit fours and costs 120 euros or 150 euros respectively. "The menu is based on the seasons and the products that we can source in the best quality," says von Winckelmann, explaining the concept. Requests for vegetarian alternatives and intolerances can be catered for by prior arrangement.
The cookery school will also start in January 2025. The restaurant is designed in such a way that it can also be used for this purpose. It offers enough space to cook together. Of course, individual cookery courses for up to twelve people are also possible by prior arrangement.
Marcel von Winckelmann was most recently head chef at the Landgasthof zum Müller in Ruderting. Last year, he came third in the prestigious "Chef of the Year" competition. His career as a chef began with training at Schwingshackls Esskultur in Bernried and on Lake Tegernsee. In the years that followed, he worked in several top restaurants such as Restaurant Ikarus in Salzburg, Il Giardino in Bad Griesbach with Denis Feix (2 Michelin stars at the time), Lukas Restaurant and Lukas Steak in Schärding.
