Bistro cuisine moves into Le Faubourg

Chef develops special casualness from his everyday fine dining

BERLIN: How simple can fine dining be? When Lukas Hackenberg announced in spring 2023 that he wanted to make fine dining suitable for everyday use, many people thought he would have to bend over backwards to achieve this balancing act. But with clear ideas and the best ingredients, the 28-year-old made a convincing impression. Now he is taking the next step and setting contemporary accents with bistronomy at Le Faubourg. "Simple recipes can surprise," promises the young chef, who uses his creativity to translate French bistro classics into relaxed fine dining with Berlin influences. "The new menu offers an unusual twist because it combines classic basic elements of French cuisine with modern techniques, different textures and good products from France such as Charolais beef." For Hackenberg, the focus is always on flavour and the best taste.

A tarte flambée (from 14 euros) becomes an aromatic speciality and a goulache de boeuf (18 euros) a finely balanced composition with different textures. Other well-known specialities such as bouillabaisse (35 euros), longe de porc (27 euros) and oysters au gratin (3 pieces for 21 euros) also enrich the menu. Instead of mashed potatoes, you will find a potato pavé as a side dish. "We are very keen to preserve the traditions of French cuisine and at the same time cook in a contemporary way," says Lukas Hackenberg, "guests should enjoy a pleasant time and not worry about what might be hidden behind allusions or complicated names when making their selection."

From tartare (29 euros) as a starter to mussels (22 euros) as an intermediate course and crème brûlée (10 euros) to round off the meal, there really is no lack of French delicacies that are part of a successful evening. The subtle difference that Lukas Hackenberg stands for at Le Faubourg can of course be expected with every dish. "Our aim is to create a mix of the familiar and the new that is unique to us," emphasises Lukas Hackenberg. The new menu is available immediately and changes seasonally.

Le Faubourg is open Monday to Friday from 12:00 to 15:00 and Wednesday to Saturday from 18:00 to 23:00. Bookings can be made on +49 30 80 09 99 77 00 or by e-mail to lefaubourg@remove-this.dorint.com. The restaurant offers a business lunch from Monday to Friday.
