Bobby Bräuer leaves EssZimmer
MUNICH. The two-star restaurant EssZimmer in Munich is getting a new head chef. Bobby Bräuer wants to "devote himself more to his family and do something else after 40 years in top gastronomy", the Süddeutsche Zeitung quotes him as saying. The report goes on to say that sous chef Jens Madsen will take over. According to the report, he will implement a new concept with his "own signature". Details are to be announced "soon" by BMW Welt, where the restaurant is located, and the Käfer Group, which operates the restaurant. According to the report, Bräuer intends to continue cooking for private dining and events.
Bobby Bräuer did his apprenticeship with Otto Koch at "Le Gourmet" in Munich and then went on to spend his travelling years at Jean-Marie Meulien's three-star restaurant, L'Oasis in La Napoule near Cannes or with André Jaeger at the Schaffhausen Fischerzunft. In Germany, he cooked with the greatest chefs of the day. In 1990 at the Schweizer Stuben under Dieter Müller, in 1991 at the Aubergine with Eckart Witzigmann (as sous-chef). In 1993, he was given his first head chef position at Restaurant Königshof. This was followed by further positions in Düsseldorf, Berlin and Kitzbühel before he became head chef at the EssZimmer restaurant at BMW Welt in Munich in February 2013. Here he was awarded his second Michelin star in 2015 and has continuously cooked his way into the ranks of the 20 best chefs in Germany.
