André Kaiser assumes overall responsibility for the culinary outlets

ANDERMATT: André Kaiser has recently impressed with his culinary skills in Ras Al Khaimah, Doha, Shanghai and Oman. He is now taking over overall responsibility for the culinary outlets at The Chedi Andermatt.

Guests from all over the world like to come to The Chedi Andermatt for a gastronomic experience. That is why the appointment of the well-travelled André Kaiser as Culinary Director is a highlight of his career to date. The German has been cooking professionally for a good 20 years. He started with an apprenticeship at the Maritim Seehotel Holsteiner Hof in Timmendorfer Strand and then moved on to Sylt, where he collected his first GaultMillau points at the Hotel Wathof.

André Kaiser experienced a formative phase in Qatar: "his" European restaurant and business lunch at the Kempinski Residences & Suites Doha were honoured by Time Out Magazine. He spent four years in Shanghai, where he not only learnt Mandarin at "The One" Managed by Kempinski, but also optimised the training for service and cuisine. During this time, he also received the "Hospitality Management Diploma" from Cornell University New York.

Adept at catering on a grand scale

Further positions followed at the Shangri-La Barr Al Jissah Resort & Spa in the Sultanate of Oman, Fairmont Singapore & Swissôtel The Stamford Singapore and Fairmont Doha. There, André Kaiser worked as Executive Chef on mega events such as the FIFA World Cup 2022, the Fairmont Global Leadership Summit 2023 and the Qatar Economic Forum 2023. He was also entrusted with major events such as weddings with up to 1,000 guests, the Fairmont's 15 food outlets and 45,000 square metres of catering space. He has also worked with renowned star chefs such as Yannick Alléno (3 Michelin stars) and Enrico Crippa (3 Michelin stars) at pop-up events, gaining experience at star level.

Few German-speaking chefs have a repertoire that is as suitable for the top-class restaurants at The Chedi Andermatt. "I'm looking forward to working in an Alpine environment," says André Kaiser, "and supporting such diverse offerings as The Restaurant, The Lobby and The Bar, The Cigar and Wine Library and, of course, the two gourmet restaurants The Japanese and The Japanese at Gütsch at 2400 metres." André Kaiser took up his position on 16 September.
