New team at edl.eins
DEGGENDORF. Following the departure of head chef Martin Lunzer, under whose leadership edl.eins achieved a star in the Michelin Guide for the first time, the reopening is planned for 11 October with a new line-up of staff.
According to a press release, "as culinary mastermind" star chef Daniel Klein will take over the culinary management of his own restaurant KOOK[36] as well as the edl.eins restaurant, the DALLAS BAR and the NEUN36 café-bistro. From October, Nicolas La Rocca, the new head chef at edl.eins, will have operational responsibility for the kitchen. Lukas Sonntag will be the new head chef at KOOK[36]. Both restaurants will be catered for by Daniel Klein, but their concepts will differ. While KOOK[36] can be defined with the words "authentic, lively and precious", the new concept of edl.eins after the break focuses on the "noble basic product". The K Gastronomie GmbH team relies on hand-picked ingredients of the highest quality, which impress with their purity and freshness, to bring a modern interpretation of French cuisine to the urban spaces of the KARL Tower.
On 16 October, edl.eins will also be expanded to include the new à la carte by edl.eins area. In future, the entire 9th floor will be open to connoisseurs in the evening. In addition to the gourmet restaurant, an à la carte concept will complement the existing offer. Whether starter with main course or dessert, guests will have a free choice on the new, additional menu. Daniel Klein and Managing Director André Karl are just as committed to quality here as they are in the gourmet restaurant.
