The two-star restaurant in Rust has a new restaurant manager and a new sommelier

RUST The "Ammolite - The Lighthouse Restaurant", which has been awarded two Michelin stars and three red toques by Gault&Millau, will now be supported by sommelier Sascha Schmidt and Lisa-Marie Schmidt as restaurant managers. Located in the lighthouse of the 4-star superior hotel "Bell Rock" at the Europa-Park adventure resort, the fine dining spot under the management of chef Peter Hagen-Wiest has been a favourite on the top gastronomic scene in Germany for over ten years.

Peter Hagen-Wiest is convinced that the young duo will enrich the Ammolite with their in-depth gastronomic expertise with immediate effect: "We warmly welcome Mr and Mrs Schmidt to the team. In addition to a newly inspired menu, our guests can look forward to continued excellent service and selected fine wine recommendations". Both have previously worked in renowned restaurants such as the Louis C. Jacob in Hamburg as well as in the 2-star restaurants "bianc" in Hamburg and "Purs" in Andernach. Lisa-Marie Schmidt sees herself as a passionate restaurateur and was most recently able to prove this as a restaurant manager. Sascha Schmidt has already lived out his passion for wine as Head Sommelier in upmarket establishments.

The head chef at Ammolite focuses on classic French cuisine, interpreted in a variety of ways and with first-class flavours. Creative sophistication and attention to detail are clearly in the foreground. However, the focus always remains on flavour, the character of the original product and the balance of the dish. Fresh, seasonal vegetables from his own organic farm as well as meat and fish with a quality label are an integral part of his philosophy and recipe for success. In addition to the excellent cuisine, the exquisite wine cellar, stocked with regional, national and international greats, is also worth a visit.
