"The kitchen performance of Michael Dyllong and his team was very strong over long stretches of the evening. Even if the combination of Western European and French products and kitchen techniques with Japanese influences and quotes is now practised all over the country and sometimes seems a little outdated, this blend succeeds here high above the rooftops of Dortmund in many ways, especially with regard to the greetings from the kitchen and the starters. Overall, Mr Dyllong's cuisine has certainly developed since its beginnings in the Hohensyburg casino, as it has become more mature in composition and less playful than it was back then. This positive development is also honoured by most of the relevant guides, because in many (e.g. Gusto, Gault Millau or Feinschmecker) the ratings are already tending towards a 2-star level, which can certainly be achieved here with further perseverance and even more consistency."
