Former Michelin-starred restaurant on the Elbe in Hamburg reopens

HAMBURG The Hamburg restaurant institution Le Caranard is reopening today. Jakob Luis Hielscher is the new operator of the restaurant with a view of the Elbe, reports the Hamburger Abendblatt: "I grew up in the neighbourhood, and of course this unique location fascinates me. You can't get any more Hamburg than this. I can't get enough of the harbour backdrop," he told the newspaper. In addition to fine dining, he wants to offer a club menu and cocktails at the bar.

After the soft opening phase in August, the fine dining menu will change every month. For example, cordon bleu of sweetbreads or North Atlantic Norway lobster are to be served at the start. According to the report, the head chef is Marvin Schönebeck, who most recently worked as sous chef at Waterkant in the Empire Riverside Hotel. Hielscher's partner Victoria Joana Scherer is responsible for the wine selection.

The former Michelin-starred restaurant Le Canard closed in November 2020. Josef Viehauser had initially achieved one star in the property created by star architect Meinhard von Gerkan. After 2004, Ali Güngörmüş took over the kitchen. In 2016, he handed it over to his long-time employees Florian Pöschl and Sebastian Bünning. After a fire in 2018, the rooms had to be renovated. Norman Etzold then took over responsibility for the kitchen and was able to confirm the Michelin star. He ended his work there in 2020. The restaurant lost its star under his successor.
