RAW is to be transformed into an international cookery school

TAIPEH. André Chiang's two-star restaurant RAW will close at the end of the year. It will then be converted into an international cookery school, Chiang announced in Taipei. Even if people no longer have the opportunity to eat his dishes, this does not mean the end of a glorious era. A bigger, more important and more meaningful phase is beginning, he continued. His aim is to improve the training programmes for young chefs from Taiwan and to open their eyes to creativity.

Chiang returned to Asia from France 25 years ago. He first established the André restaurant in Singapore, which topped the restaurant rankings for the city state in 2017 and 2018. RAW was founded ten years ago. The restaurant received its first star in 2018 and has held two stars since 2019. In 2018, André Chiang received the Asia's 50 Best Restaurants lifetime achievement award.
