HANNOVER. The former sous chef and patissier at the two-star restaurant VOTUM, Nico Kuckenburg, is moving to The Wild Duck restaurant. As reported by the Hannoversche Allgemeine Zeitung, he will take over the management of the kitchen there with owner Viet Anh Nguyen from August. He told the newspaper: "I wanted to develop my career further. Nico Kuckenburg was already working at the "Ole Deele" alongside VOTUM head chef Benjamin Gallein. The two moved to VOTUM in Hanover together and have achieved two stars in the Michelin Guide there.

At The Wild Duck, Nico Kuckenburg will once again be working with his wife Laura, who is the restaurant manager there. She had also previously moved from VOTUM. Sommelier Martina Glaubenstein is also part of the team. Owner Viet Anh Nguyen told the HAZ that he believes the team can achieve a star in the Michelin Guide. According to the report, his Vietnamese roots will continue to be recognisable in terms of style. Nico Kuckenburg has also recently worked a lot with Asian flavours. "We have a fusion cuisine in mind. Anh brings in the Vietnamese style, I bring in the modern fine dining elements, there's something to build on," the newspaper quotes Nico Kuckenburg as saying.
