"People still cook with strong flavours. We don't shy away from strong seasoning and adding salt. Sometimes you overshoot the mark, for example with the asparagus amuse. I had a slight fear beforehand that this might be too similar to what we had experienced at the sister hotel Auerhahn. But that was not the case. The standard is clearly higher here. We had little to criticise about what was on offer. I think the Michelin rating is absolutely deserved." (Published in June 2024)
