"A praline of veal tail and farce in the main course also fits into the soul food category. Strongly flavoured, it offers a nice contrast to the pink roasted slice of veal fillet in the centre of the plate, which is only sprinkled with a few salt crystals. However, this is possible thanks to the noticeably high quality of the meat. The two are then accompanied by a risotto topped with young green asparagus. This has an intense truffle flavour, but is a somewhat firmer representative of its genre, as can be seen from the fact that it remains in a cuboid shape." (Published in May 2024)
